The Christmas feast

My husband, Julian, introduced me to goose last year which was a revelation. Having been brought up in rural Ireland, there wasn’t much choice and turkey became the norm at Christmas. From such deeply rooted traditions, I was persuaded to turn my back on turkey and try goose. Today it is the bird of choice in the Glasgow household and our faithful AGA will be sizzling with delicious aromas on Sunday morning to whet our appetites. The fat will be saved for crunchy roast potatoes from the farmers’ market together with a stick of freshly picked sprouts. I have been saving a bottle of Krug which we will enjoy with smoked salmon after a brisk morning walk with our dog Suki before tucking our Christmas feast with gusto accompanied by a bottle of Chateau de Serame L’Icone 2005 from Dourthe’s estate in the Languedoc. Christmas pudding will be served with chilled glasses of my favourite tipple, Taylor’s 20 Year Old Tawny finishing with a maganificent 1985 Vintage from Taylor’s. A very happy Christmas to everyone and a special toast to 2012.
